Ingredients

Scale

1 cup Halal-certified unsalted butter
1 cup Granulated sugar
1 Large egg
2 tsp Non-alcoholic vanilla bean paste
2.5 cups All-purpose flour
1 tsp Baking powder
1 cup Halal-certified heavy cream
3 large Egg yolks
2 tbsp Cornstarch
1/4 cup Granulated sugar
1/2 cup Extra granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened halal butter and granulated sugar until the mixture looks light and fluffy
  2. Add the egg and non-alcoholic vanilla, then beat until fully incorporated
  3. Gradually stir in the flour and baking powder. Scoop tablespoon-sized balls onto a lined baking sheet and flatten them slightly
  4. Bake for 10-12 minutes until the edges turn a pale golden brown. Let the cookies cool completely on a wire rack
  5. While the cookies cool, whisk the egg yolks, sugar, and cornstarch in a small bowl. In a saucepan, heat the heavy cream until it just begins to simmer
  6. Slowly pour half of the hot cream into the egg mixture while whisking constantly. Return everything to the saucepan and cook over medium heat. Whisk vigorously until the custard thickens into a spreadable consistency
  7. Remove from heat and stir in the remaining vanilla. Once the custard cools to room temperature, spread a generous tablespoon onto each cookie
  8. Smooth the top with a spatula to create an even surface. Place the cookies in the refrigerator for 30 minutes to set the custard firmly
  9. Sprinkle a thin, even layer of granulated sugar over the chilled custard
  10. Use a kitchen torch to melt and caramelize the sugar until it turns a deep amber color. Alternatively, place the cookies under a broiler for 1-2 minutes, watching them very closely to prevent burning

Notes

Always use room temperature eggs for better dough emulsification.

Do not overbake the cookies; they should remain soft in the center.

When torching, keep the flame moving constantly to prevent melting the custard.

Ensure custard is completely cooled before assembly to prevent sliding.

Use a small offset spatula for the smoothest custard application.

Always use halal certified ingredients to maintain recipe integrity.

Store leftovers in an airtight container in the refrigerator; the sugar crust will soften over time.

For best experience, eat within 24 hours.

To prep ahead, bake cookies and make custard a day early, but torch sugar just before serving.

Do not reheat in the microwave.

Serve cold or at slight room temperature.
