1 medium Yellow Onio
3 cloves Garlic
2 tablespoons Halal Tamari
3 tablespoons Fresh Lemon Juice
1 tablespoon Smoked Paprika
1 teaspoon Ground Cumi
1 tablespoon Chili Powder
2 tablespoons Tomato Paste
0.5 cup Vegetable Broth
1012 small Corn or Flour Tortillas

Instructions

  1. Drain the cans of young green jackfruit and rinse the pieces thoroughly under cold water
  2. Use your fingers or a fork to shred the jackfruit pieces, removing any hard, core-like bits
  3. Heat a large skillet over medium heat with a splash of olive oil and sauté diced onions for five minutes until translucent
  4. Stir in the minced garlic and cook for another minute until fragrant
  5. Add the shredded jackfruit to the skillet and sprinkle with smoked paprika, cumin, and chili powder
  6. Pour in the halal tamari and lemon juice, stirring well to coat the jackfruit
  7. Stir in the tomato paste and vegetable broth, then reduce the heat to low
  8. Let the mixture simmer for 15 to 20 minutes until the jackfruit absorbs the liquid and softens
  9. Heat the tortillas over an open flame or in a dry pan until slightly charred
  10. Spoon a generous amount of the jackfruit mixture into each tortilla and serve immediately with fresh garnishes
