A halal-friendly, protein-packed recipe for Tuna Melt Quesadillas that bridges the gap between classic American comfort food and mindful eating, featuring savory tuna, melted cheddar, and crispy tortillas.

Ingredients

Scale

2 5 oz cans Canned Tuna
0.25 cup Halal Mayonnaise
1 tablespoon Lemon Juice
1 stalk Celery
2 tablespoons Red Onio
1.5 cups Halal Cheddar Cheese
4 large Flour Tortillas
0.5 teaspoon Dried Dill
To taste Black Pepper
1.5 tablespoons Butter or Olive Oil

Instructions

  1. In a medium mixing bowl, combine the drained tuna, halal mayonnaise, fresh lemon juice, diced celery, minced red onion, and dried dill. Use a fork to flake the tuna and mix until well combined
  2. Season the tuna mixture with a pinch of black pepper
  3. Lay the tortillas flat on a clean work surface and sprinkle a layer of shredded halal cheddar cheese over one-half of each tortilla
  4. Divide the tuna mixture evenly among the tortillas, spreading it over the cheese layer, then top with another sprinkle of cheese
  5. Fold each tortilla over to create a half-moon shape
  6. Place a large non-stick skillet over medium heat and add a small amount of butter or olive oil
  7. Cook the quesadillas for 3-4 minutes on the first side, pressing down gently with a spatula
  8. Flip the quesadillas and cook for another 2-3 minutes until the exterior is golden brown and the cheese is melted
  9. Transfer to a cutting board, let rest for one minute, and slice into three wedges using a pizza cutter or sharp knife

Notes

Ensure the tuna is drained very well to prevent the tortillas from becoming soggy.

For the best melt, grate your own cheese from a block rather than using pre-shredded varieties.

Maintain medium-low heat to ensure the cheese melts fully without burning the tortilla.

Do not overstuff the tortillas to ensure they stay together when flipped.

Reheat leftovers in a skillet, toaster oven, or air fryer at 350°F to maintain crispiness; avoid using a microwave.
