A hearty and comforting Tater Tot Breakfast Casserole made with flavorful halal sausage, fluffy eggs, and melted cheddar cheese. This easy-to-assemble dish is perfect for family brunches, meal prepping, or busy weekday mornings.

32 oz Frozen Tater Tots
1 lb Halal Breakfast Sausage
10 Large Eggs
1 cup Milk
2 cup Cheddar Cheese
0.5 cup Onio
0.5 cup Bell Pepper
0.5 teaspoon Salt
0.25 teaspoon Black Pepper
0.5 teaspoon Garlic Powder
As needed Cooking Spray

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with cooking spray
  2. In a large skillet over medium heat, cook and crumble the halal breakfast sausage until thoroughly browned. Drain any excess grease
  3. Add the diced onion and bell pepper to the skillet with the sausage and sauté for 5-7 minutes until softened, then remove from heat
  4. Spread half of the frozen tater tots evenly across the bottom of the prepared baking dish
  5. Sprinkle the cooked sausage and vegetable mixture over the tater tots, followed by 1 cup of the shredded cheddar cheese
  6. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined and frothy
  7. Carefully pour the egg mixture into the baking dish and arrange the remaining tater tots on top
  8. Bake in the preheated oven for 30 minutes
  9. Remove the casserole from the oven, sprinkle the remaining 1 cup of cheese over the top, and return to the oven for 15-20 minutes until the eggs are set and the tots are crispy
  10. Let the casserole rest for 5-10 minutes before slicing and serving

Notes

Do not thaw the tater tots before use to ensure they become crispy during baking.

To save time, assemble the casserole the night before and store it covered in the refrigerator; add 10-15 minutes to the baking time if starting cold.

Ensure you drain the sausage grease thoroughly to prevent an oily texture.

Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for 2-3 months.
