A speedy one-pan halal ground beef and veggie skillet that's ready in under 30 minutes, perfect for busy weeknights when you want a nourishing, comforting meal with minimal cleanup.

1 lb Halal Ground Beef
1 tbsp Olive Oil
1 medium Yellow Onio
3 cloves Garlic
1 large Red Bell Pepper
1 medium Zucchini
1 14.5 oz Canned Diced Tomatoes
1 cup Halal Beef Broth
1 cup White Rice
1 tbsp Tamari
1 tsp Dried Oregano
1 tsp Smoked Paprika
0.5 tsp Salt
0.25 tsp Black Pepper
2 tbsp Fresh Parsley

Instructions

  1. Heat olive oil in a large, oven-safe skillet or a deep frying pan over medium-high heat. Add the halal ground beef, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain any excess fat
  2. Add the chopped onion and minced garlic to the skillet with the beef. Sauté for 3-4 minutes until the onion softens and becomes translucent
  3. Stir in the chopped red bell pepper and zucchini. Cook for another 3-5 minutes, allowing them to soften slightly. Next, add the dried oregano, smoked paprika, salt, and black pepper. Stir well to coat the beef and vegetables with the spices
  4. Pour in the undrained canned diced tomatoes, halal beef broth, and tamari. Stir everything together. Add the rinsed white rice, ensuring it's submerged in the liquid. Bring the mixture to a gentle boil
  5. Reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed. If your skillet isn't oven-safe, transfer to a baking dish before covering and simmering on the stovetop
  6. Remove the skillet from the heat and let it sit, covered, for 5 minutes. Garnish with fresh chopped parsley before serving

Notes

Rinsing white rice before cooking helps remove excess starch, resulting in fluffier grains.

For a lighter option, use halal ground chicken or turkey instead of beef.

You can swap rice for couscous or small pasta shapes like orzo, adjusting cooking times accordingly.

Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days; it reheats beautifully.

To add a kick, include a pinch of red pepper flakes or a dash of halal hot sauce.
