1.5 lbs Halal Certified Boneless, Skinless Chicken Breasts
2 tbsp Olive Oil
1 medium Yellow Onio
4 cloves Garlic
1.5 cups Orzo Pasta
4 cups Halal Certified Chicken Broth
1/4 cup Fresh Lemon Juice
1 tbsp Lemon Zest
1/4 cup Fresh Parsley
2 tbsp Fresh Dill
1 tbsp Fresh Oregano
1/4 cup Crème Fraîche or Full-Fat Plain Yogurt
1 tsp Salt
0.5 tsp Black Pepper

Instructions

  1. Pat the halal certified chicken cubes dry with a paper towel and season generously with salt and pepper
  2. Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through. Remove and set aside
  3. Reduce heat to medium. Sauté finely diced onion in the skillet for 3-5 minutes until translucent. Add minced garlic and cook for one minute until fragrant
  4. Stir in the orzo pasta and toast for 1-2 minutes until slightly golde
  5. Pour in the chicken broth, lemon zest, and remaining salt and pepper. Bring to a simmer
  6. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is al dente and liquid is absorbed
  7. Return the cooked chicken to the skillet. Stir in lemon juice, fresh parsley, dill, oregano, and crème fraîche or yogurt
  8. Mix gently until heated through, adjust seasoning to taste, and serve immediately

Always ensure ingredients like chicken, broth, and yogurt are halal certified.

Do not overcrowd the pan when searing chicken or it will steam rather than brown.

Fresh herbs are highly recommended over dried for the best flavor profile.

Zest your lemon before juicing it for easier preparation.
