1 lb Large Sea Scallops
3 tbsp Unsalted Butter
3 cloves Garlic Cloves
2 tbsp Fresh Lemon Juice
2 tbsp Halal Chicken Broth
1 tbsp Olive Oil
1 tbsp Fresh Parsley
To taste Salt
To taste Black Pepper

Instructions

  1. Remove the small side muscle from each scallop if it is still attached. Pat the scallops completely dry with paper towels. This step is vital for a golden crust
  2. Sprinkle both sides of the scallops with salt and freshly ground black pepper
  3. Place a large skillet over medium-high heat. Add the olive oil and one tablespoon of butter. Wait until the fat is shimmering and very hot
  4. Carefully place the scallops in the pan. Do not overcrowd them. Let them sear undisturbed for 2 minutes until a golden-brown crust forms
  5. Turn the scallops over. Cook for another 1 to 2 minutes. Immediately remove them from the pan and set them aside on a warm plate
  6. Lower the heat to medium. Add the remaining butter and minced garlic. Sauté for 30 seconds until fragrant
  7. Pour in the halal chicken broth and lemon juice. Scrape the bottom of the pan to release the brown bits. Let the liquid simmer for 1 minute to thicken slightly
  8. Return the Lemon Butter Scallops to the pan. Spoon the sauce over them to coat
  9. Sprinkle with fresh parsley and serve your Lemon Butter Scallops immediately

Ensure scallops are patted completely dry for a golden sear, as moisture causes steaming instead of browning.
