1.5 lbs Ground Beef
1 medium Yellow Onio
2 cloves Garlic
10.5 oz Cream of Mushroom Soup
10.5 oz Cheddar Cheese Soup
1/2 cup Milk
1 cup Frozen Mixed Vegetables
2 cups Shredded Cheddar Cheese
32 oz Frozen Tater Tots
1 tsp Salt
1/2 tsp Black Pepper
1 tbsp Olive Oil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until completely browned
  3. Drain any excess grease thoroughly from the beef
  4. Reduce the heat to medium. Add the chopped yellow onion and cook for 5-7 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant
  5. Remove the skillet from the heat and stir in the undiluted cream of mushroom soup, cheddar cheese soup, and milk. Mix until smooth and creamy
  6. Season the mixture with salt and black pepper to taste
  7. Stir in the frozen mixed vegetables and 1 cup of the shredded cheddar cheese
  8. Transfer the beef mixture to the prepared 9×13-inch baking dish and spread it out evenly
  9. Arrange the frozen tater tots in a single layer over the beef mixture, covering the entire surface
  10. Bake in the preheated oven for 30-35 minutes until the tater tots are golden brown and the filling is bubbly
  11. Remove from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese over the top
  12. Return to the oven for 5-10 minutes until the cheese is melted and bubbly
  13. Let the casserole rest for 5-10 minutes before serving
