A creamy and comforting halal-friendly pasta bake featuring tender chicken, fresh spinach, and a rich cheese sauce, perfect for a lazy Sunday family dinner.

Ingredients

12 oz Penne or your favorite short pasta
1 tbsp Olive oil
1 lb Halal chicken breast, cut into 1-inch cubes
1 medium Yellow onion, chopped
3 cloves Garlic, minced
4 cups Fresh spinach
1.5 cups Halal chicken broth
1.5 cups Heavy cream
1/2 cup Vegetarian/microbial rennet Parmesan-style cheese, grated
1 cup Vegetarian/microbial rennet Mozzarella cheese, shredded
1 tsp Dried Italian seasoning
1/2 tsp Salt
1/4 tsp Black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the penne pasta according to package directions until al dente. Drain and set aside
  2. While the pasta cooks, heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add the cubed halal chicken breast and cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside
  3. Add the chopped onion to the same skillet and sauté for 3-5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant
  4. Add the fresh spinach to the skillet and cook until it wilts down, about 2-3 minutes. Pour in the halal chicken broth, scraping the bottom of the pan to loosen any browned bits
  5. Stir in the heavy cream, Italian seasoning, salt, and black pepper. Bring the sauce to a gentle simmer and cook for 3-5 minutes to thicken slightly
  6. Return the cooked chicken and drained pasta to the skillet. Stir everything together until well coated. Mix in half of the mozzarella and Parmesan-style cheese
  7. Sprinkle the remaining mozzarella and Parmesan-style cheese over the top. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden brow
  8. Remove from the oven and let the pasta bake rest for 5-10 minutes before serving to allow the sauce to set

Notes

Undercook the pasta by 1-2 minutes from the package instructions as it will continue cooking in the oven.

Freshly grated mozzarella and Parmesan-style cheese melt more smoothly than pre-shredded varieties.

Ensure all dairy products and cheeses use microbial or vegetarian rennet to maintain halal compliance.

You can assemble the dish ahead of time and store it in the refrigerator for up to 24 hours before baking.
