Crispy, golden-brown Gluten-Free Zucchini Fritters that are halal-friendly and packed with fresh vegetables. Perfect as a healthy snack, appetizer, or light meal for the whole family.

0.5 cup Gluten-Free All-Purpose Flour
2 Large Halal Certified Eggs
0.25 cup Green Onions
2 cloves Garlic
1 tsp Fresh Lemon Juice
0.5 tsp Sea Salt
0.25 tsp Black Pepper
34 tbsp Olive Oil

Instructions

  1. Grate the zucchini using a box grater or a food processor with a shredding attachment
  2. Place the shredded zucchini in a bowl, sprinkle with a pinch of salt, and let it sit for 10 minutes to draw out moisture
  3. Transfer the salted zucchini to a clean kitchen towel or cheesecloth and squeeze with force until all excess liquid is removed
  4. In a separate bowl, whisk the halal certified eggs, then stir in the squeezed zucchini, gluten-free flour, sliced green onions, minced garlic, lemon juice, and pepper until combined
  5. Heat olive oil in a large skillet over medium heat until it shimmers
  6. Scoop two tablespoons of batter per fritter into the pan, flattening them slightly with a spatula
  7. Fry for 3-4 minutes per side until they reach a deep golden brown and crispy texture
  8. Transfer to a plate lined with paper towels to drain excess oil and serve immediately

Notes

Ensure your gluten-free flour blend contains xanthan gum for the best binding results.

The most critical step is squeezing the zucchini dry; any remaining moisture will result in soggy fritters.
