2 cups Gluten-Free All-Purpose Flour
1 tsp Baking Powder
1/2 tsp Sea Salt
3 tbsp Avocado Oil or Olive Oil
3/4 cup Warm Water
1 tsp Lemon Juice

Instructions

  1. In a large mixing bowl, whisk together the gluten-free flour, baking powder, and sea salt until uniform
  2. Create a well in the center of the dry ingredients and pour in the oil, warm water, and lemon juice
  3. Stir the mixture with a sturdy spoon until a dough forms
  4. Knead the dough by hand for approximately two minutes until it is smooth and slightly tacky
  5. Cover the bowl with a clean kitchen towel and let the dough rest for at least 15 minutes to fully hydrate
  6. Divide the dough into 8 to 10 equal pieces and roll each into a ball
  7. Place each ball between two sheets of parchment paper and roll out into a thin circle about 6 to 8 inches wide
  8. Heat a non-stick skillet over medium-high heat without oil
  9. Cook each tortilla for about 1 minute until bubbles form, then flip and cook for another 30 to 45 seconds
  10. Keep cooked tortillas covered in a clean cloth stack to maintain softness

Notes

Ensure your gluten-free flour blend contains xanthan gum to act as a binder.

Use warm water to help activate the starches in the flour for better flexibility.

Store leftovers in an airtight container in the fridge for 4 days or freeze for up to 3 months.

Reheat in a dry skillet or microwave wrapped in a damp paper towel to restore moisture.
