As a busy mom of three, I often find myself racing against the clock when dinner time approaches. This Gluten Free Chicken Stir Fry is a staple because it nourishes my children and brings everyone to the table with a smile. It's a quick, under 30-minute meal offering a fantastic balance of flavor and nutrition, utilizing fresh, vibrant vegetables and a savory, umami-rich, gluten-free sauce. Made with halal-friendly practices, it's gentle on the stomach and customizable with various ingredients.

Ingredients

Scale

1.5 lbs Halal Certified Chicken Breast
1/4 cup Tamari
1 tbsp Fresh Ginger
3 cloves Fresh Garlic
1 tbsp Lemon Juice
2 tbsp Honey or Maple Syrup
1/2 cup Halal Chicken Broth
1 tbsp Cornstarch or Tapioca Starch
2 cups Broccoli Florets
2 medium Bell Peppers
1 large Carrot
2 tbsp Avocado Oil or Coconut Oil
1 tsp Sesame Seeds

Instructions

  1. In a small glass bowl, whisk together the tamari, halal chicken broth, honey, and fresh lemon juice. Add the grated ginger and minced garlic to the mixture. Finally, stir in the cornstarch until it dissolves completely. Set this savory sauce aside so the flavors can meld while you prepare the meat and vegetables for your Gluten Free Chicken Stir Fry
  2. Place a large skillet or wok over medium-high heat and add one tablespoon of oil. Once the oil shimmers, add the halal certified chicken pieces in a single layer. Sear the chicken for about 5-6 minutes, turning occasionally, until it reaches a golden-brown color and is fully cooked through. Remove the chicken from the pan and set it aside on a clean plate
  3. Add the remaining tablespoon of oil to the same pan. Toss in the broccoli, carrots, and bell peppers. Stir frequently to ensure even cooking. Sauté the vegetables for about 4-5 minutes until they become tender-crisp and bright in color
  4. Return the cooked chicken to the skillet with the vegetables. Give the sauce a quick whisk to incorporate any settled starch and pour it over the mixture. Stir everything constantly for 1-2 minutes. You will notice the sauce for your Gluten Free Chicken Stir Fry begins to bubble and thicken into a glossy coating that clings to every ingredient. Once the sauce reaches your desired consistency, remove the pan from the heat immediately

Notes

Ensure your pan is very hot before adding ingredients for a signature sear that locks in moisture.

Prep all ingredients (vegetables, whisk sauce) before turning on the stove, as the cooking process is very quick.

Do not overcrowd the pan; cook chicken in batches if you have a small skillet to prevent steaming.

Use fresh ginger and garlic for a much more vibrant flavor than powdered counterparts.

Slice chicken into uniform pieces to ensure they cook at the same rate.

Store cooled stir fry in an airtight glass container in the refrigerator for up to three days. Reheat in a skillet over medium heat with a splash of halal chicken broth or water to loosen the sauce.

Customize by swapping chicken for halal certified thinly sliced beef, adding red pepper flakes for heat, or using snap peas/bok choy instead of broccoli.

Always use lemon juice instead of rice vinegar to keep the recipe strictly halal and alcohol-free.
