1.5 lbs Halal Chicken Thighs or Breasts
2 tbsp Olive Oil
1 large Onio
3 cloves Garlic
1 cup Halal Chicken Broth
2 tbsp Tamari (Halal Soy Sauce)
1 tbsp Honey or Maple Syrup
1 tsp Dried Italian Seasoning
0.5 tsp Salt
0.25 tsp Black Pepper
1 tbsp Cornstarch
2 tbsp Cold Water
2 tbsp Fresh Parsley

Instructions

  1. Prepare Chicken: Cut the halal chicken thighs or breasts into 1-inch pieces. Pat them dry with paper towels and season lightly with salt and pepper
  2. Sauté Aromatics: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant
  3. Brown Chicken: Push the onions and garlic to one side of the skillet. Add the chicken pieces in a single layer to the empty side and cook for 3-4 minutes per side until lightly browned
  4. Deglaze and Simmer: Pour in the halal chicken broth, scraping up any browned bits from the bottom. Stir in the tamari, honey or maple syrup, and Italian seasoning. Bring to a gentle simmer
  5. Thicken Sauce: Reduce the heat to medium-low, cover, and let simmer for 10-15 minutes until the chicken reaches an internal temperature of 165°F
  6. Add Slurry: Whisk together the cornstarch and cold water to create a slurry. Stir the slurry into the simmering sauce and cook for 1-2 minutes until thickened
  7. Serve: Remove from heat, adjust seasoning to taste, and garnish with fresh chopped parsley. Serve hot

Notes

Always ensure chicken reaches an internal temperature of 165°F (74°C) for safety.

Do not overcrowd the pan when browning chicken to ensure a good sear rather than steaming.

For a creamy variation, stir in 1/4 cup of halal-certified crème fraîche or full-fat yogurt at the end.
