A simple, family-friendly one-pan meal featuring tender chicken coated in a sweet and tangy honey BBQ sauce, served over fluffy rice.

1.5 lbs Boneless, Skinless Chicken Breasts
1.5 cups Long-Grain White Rice
3 cups Chicken Broth or Water
1 cup BBQ Sauce
1/4 cup Honey
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Smoked Paprika
1 tbsp Olive Oil
to taste Salt
to taste Black Pepper
2 tbsp Green Onions
1 tsp Sesame Seeds

Instructions

  1. Cut the chicken breasts into 1-inch cubes and toss in a medium bowl with garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown. Remove chicken from the pan and set aside
  3. In a small bowl, whisk together the BBQ sauce and honey
  4. In the same skillet, bring the chicken broth or water to a boil. Stir in the rice, scraping any browned bits from the bottom of the pa
  5. Nestle the partially cooked chicken back into the rice mixture. Pour half of the honey BBQ sauce over the chicken and rice, stirring gently to combine
  6. Reduce heat to low, cover the skillet tightly, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed
  7. Remove from heat and let the skillet rest, covered, for 5 minutes to allow the rice to fluff
  8. Uncover, add the remaining honey BBQ sauce, and toss everything together. Garnish with chopped green onions and sesame seeds before serving

Notes

Do not overcrowd the pan when searing chicken to ensure a golden crust.

Avoid lifting the lid while the rice is simmering to prevent gummy or unevenly cooked rice.

For extra flavor, marinate the chicken in a bit of the BBQ sauce for 30 minutes before cooking.

Chicken thighs can be substituted for breasts for juicier results.

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
