A comforting and incredibly simple slow cooker meal featuring tender shredded chicken in a savory, creamy ranch-based sauce. Perfect for busy families requiring a 'dump and go' solution with minimal effort.

Ingredients

Scale

2.5 lbs Boneless, Skinless Chicken Breasts or Thighs
1 10.5 oz can Cream of Chicken Soup
0.5 cup Chicken Broth
1 1 oz packet Dry Ranch Seasoning Mix
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
0.5 teaspoon Black Pepper
2 tablespoons Fresh Parsley

Instructions

  1. Pat chicken breasts or thighs dry with paper towels and place them in the bottom of the slow cooker
  2. In a medium bowl, whisk together the cream of chicken soup, chicken broth, ranch seasoning mix, garlic powder, onion powder, and black pepper until smooth
  3. Pour the sauce mixture evenly over the chicken, ensuring all pieces are well coated
  4. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours until the chicken is tender and shreddable
  5. Remove the chicken from the pot and shred with two forks, or shred directly in the sauce within the slow cooker
  6. Stir the shredded chicken back into the sauce and let it warm through on LOW for an additional 10-15 minutes
  7. Garnish with chopped fresh parsley before serving

Notes

Use a slow cooker liner for virtually nonexistent cleanup.

Cream of mushroom or celery soup can be substituted for cream of chicken.

For added nutrition, toss in frozen mixed vegetables during the last hour of cooking.

If the sauce is too thin, thicken it with a slurry of 1 tablespoon cornstarch and 1 tablespoon cold water.

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months.
