It brings together ground beef and a colorful array of vegetables in a hearty, nourishing creation that simplifies dinner prep and offers minimal cleanup, making it ideal for family gatherings.

Ingredients

Scale

1 lb Halal certified ground beef
1 tablespoon Olive oil
1 medium Yellow onio
3 cloves Garlic
1 large Red bell pepper
1 medium Zucchini
1 (14.5 oz) can Diced tomatoes
1/2 cup Halal beef broth
1 teaspoon Dried oregano
1 teaspoon Dried basil
1 tablespoon Tamari
1/2 teaspoon Salt
1/4 teaspoon Black pepper
3 cups packed Fresh spinach
1/4 cup Crème fraîche
2 tablespoons Fresh parsley

Instructions

  1. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the halal certified ground beef, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat from the skillet
  2. Add the diced onion and bell pepper to the skillet. Sauté for 5 minutes, until softened. Stir in the minced garlic and cook for another minute until fragrant
  3. Add the diced zucchini, canned diced tomatoes (undrained), and halal beef broth to the skillet. Stir in the dried oregano, dried basil, tamari, salt, and black pepper. Bring the mixture to a simmer
  4. Reduce the heat to medium-low, cover the skillet, and let it cook for 10-15 minutes. This allows the flavors to meld beautifully and the vegetables to tenderize
  5. Stir in the fresh spinach until it wilts, which takes just a couple of minutes. Taste and adjust seasonings as needed. Serve hot, optionally topped with a dollop of crème fraîche or plain yogurt and fresh parsley

Notes

To achieve truly great flavor, ensure you properly brown the halal ground beef. Don't overcrowd the skillet; cook the beef in batches if necessary for proper browning.

When adding vegetables, cut them into uniform pieces to ensure even cooking and consistent texture.

Fresh herbs, like parsley or cilantro, stirred in at the very end, brighten the entire meal.

Always taste and adjust your seasonings before serving.

Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days.

To reheat, warm gently in a skillet over medium-low heat on the stovetop, adding a splash of halal beef broth or water if too dry, or microwave individual portions.
