1.5 lbs Boneless, Skinless Chicken Breasts
2 tbsp Olive Oil
2 tbsp Butter
68 cloves Garlic, minced
1 cup Chicken Broth
1 cup Heavy Cream
1/2 cup Parmesan Cheese, grated
2 cups Fresh Spinach (optional)
1 tsp Salt (or to taste)
1/2 tsp Black Pepper (or to taste)
2 tbsp Fresh Parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken: Pat your chicken breasts dry with paper towels. Season both sides generously with salt and pepper
  2. Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for 4-6 minutes per side, or until cooked through. Remove from skillet
  3. Sauté the Garlic: Reduce heat to medium. Add butter to the skillet, then garlic, sautéing for about 1 minute until fragrant
  4. Deglaze with Broth: Pour in chicken broth, scraping up any browned bits. Bring to a simmer and let reduce for 2-3 minutes
  5. Create the Cream Sauce: Stir in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and sauce thickens. Adjust seasoning
  6. Add Spinach (Optional): Stir in fresh spinach until it wilts
  7. Return Chicken to Skillet: Slice or leave chicken whole, then return to skillet, coating in sauce
  8. Serve: Garnish with parsley and serve with your favorite sides

Notes

For an even juicier result, boneless skinless chicken thighs can be used.
