2 cups Old-fashioned rolled oats
4 cups Milk (dairy or non-dairy)
1 cup Pumpkin puree
0.25 cup Brown sugar or maple syrup
1.5 teaspoons Pumpkin pie spice
1 teaspoon Cinnamo
1 teaspoon Alcohol-free vanilla extract
0.25 teaspoon Salt
0.5 cup Water (optional)

Instructions

  1. Lightly grease the inside of your slow cooker pot with butter or non-stick spray to prevent sticking
  2. In the prepared slow cooker, combine the rolled oats, milk, pumpkin puree, brown sugar or maple syrup, pumpkin pie spice, cinnamon, alcohol-free vanilla extract, and salt. Add the optional water if a thinner consistency is preferred
  3. Stir all ingredients thoroughly to ensure the pumpkin puree and spices are evenly distributed
  4. Place the lid on the slow cooker and cook on LOW for 2-4 hours, or on HIGH for 1-2 hours. The oatmeal is ready when the liquid is absorbed and oats are tender
  5. Stir the mixture about halfway through the cooking process to ensure even cooking and prevent sticking
  6. Once cooked, give the oatmeal a final stir and ladle into bowls
  7. Serve warm with desired toppings like fresh fruit, nuts, or an extra drizzle of maple syrup

Notes

Use only old-fashioned rolled oats; steel-cut oats or quick oats will not yield the same texture in this recipe.

For meal prep, store leftovers in airtight containers in the fridge for up to 5 days or freeze for up to 3 months.

To reheat, add a splash of milk or water to restore the creamy consistency.
