1.5 lbs Boneless, skinless chicken breasts
1 medium Yellow onio
2 cloves Garlic
4 cups Chicken broth
1 cup Milk
14.5 oz Diced tomatoes
1 tsp Dried Italian seasoning
0.5 tsp Salt
0.25 tsp Black pepper
12 oz Short pasta
0.5 cup Heavy cream
0.5 cup Freshly grated Parmesan cheese
0.25 cup Fresh parsley

Instructions

  1. Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the cubed chicken breast and cook, stirring occasionally, until it's golden brown on all sides and cooked through. Remove the chicken from the pot and set it aside
  2. Reduce the heat to medium. Add the chopped onion to the same pot, scraping up any browned bits from the chicken. Sauté until the onion softens, about 3-5 minutes. Stir in the minced garlic and cook for another minute until fragrant
  3. Pour in the chicken broth and milk. Add the diced tomatoes (undrained), Italian seasoning, salt, and pepper. Stir everything well to combine. Bring the mixture to a gentle simmer
  4. Once simmering, add the dry short pasta to the pot. Make sure the pasta is mostly submerged in the liquid. Cover the pot and reduce the heat to medium-low
  5. Simmer, stirring occasionally to prevent sticking, for 10-15 minutes, or until the pasta is al dente (cooked but still firm to the bite) and most of the liquid has been absorbed. Cooking times vary by pasta type, so check your package for guidance
  6. Remove the pot from the heat. Stir in the heavy cream and freshly grated Parmesan cheese until the cheese melts and the sauce is wonderfully creamy. Return the cooked chicken to the pot
