A flavorful and halal-friendly Mediterranean classic, these Chicken Souvlaki Skewers are marinated in lemon, garlic, and oregano for a tender and zesty meal that is perfect for grilling and family dinners.

2 lbs Halal certified chicken breasts
0.25 cup Extra virgin olive oil
3 tablespoons Fresh lemon juice
4 cloves Garlic
2 teaspoons Dried oregano
To taste Sea salt and black pepper
8 pieces Wooden or metal skewers

Instructions

  1. In a large glass bowl or a heavy-duty zip-top bag, combine the olive oil, fresh lemon juice, minced garlic, dried oregano, sea salt, and black pepper
  2. Whisk the marinade mixture until all ingredients are well combined
  3. Add the cubed halal certified chicken into the marinade and ensure every piece of meat is thoroughly coated
  4. Place the chicken in the refrigerator to marinate for at least 30 minutes, or up to 4 hours for maximum flavor
  5. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes
  6. Thread the marinated chicken pieces onto the skewers, leaving a tiny bit of space between pieces to ensure even cooking
  7. Preheat an outdoor grill or indoor grill pan over medium-high heat and lightly oil the grates
  8. Place the skewers on the grill and cook for 10-12 minutes, turning every few minutes to achieve a beautiful char on all sides
  9. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C)
  10. Remove the skewers from the heat and let them rest for a few minutes before serving

Notes

Avoid overcooking the chicken breast to ensure it stays juicy and does not dry out.

Fresh lemon juice is highly recommended over bottled juice for superior flavor.

If using metal skewers, be cautious as they become extremely hot during the grilling process.
