Crispy baked potato shells filled with creamy seasoned mashed potatoes and topped with golden melted cheese

Ingredients

6 medium russet potatoes

2 tablespoons butter

⅓ cup sour cream

¼ cup milk or heavy cream

½ teaspoon garlic powder

Salt and black pepper, to taste

1 cup shredded mozzarella or cheddar cheese

2 tablespoons chopped fresh parsley, for garnish

Instructions

  • Preheat oven to 400°F (200°C). Scrub, dry, and prick the potatoes with a fork.
  • Bake for 45–50 minutes, or until fork-tender.
  • Cool slightly, then cut each potato in half lengthwise.
  • Scoop the potato flesh into a bowl, leaving approximately ¼ inch inside each shell.
  • Mash the potato flesh with butter, sour cream, milk, garlic powder, salt, and black pepper until creamy.
  • Spoon the filling back into the potato shells and sprinkle with shredded cheese.
  • Bake for another 15–20 minutes, until the cheese is melted and bubbly.
  • Garnish with chopped parsley and serve warm.

Notes

Use medium-sized russet potatoes for the best texture. Avoid overmixing the filling, which can make mashed potatoes gummy. For extra flavor, add cooked halal turkey bacon, caramelized onions, or chopped chives. The potato boats can be assembled ahead of time and refrigerated before the second bake.
