2 medium Russet Potatoes
0.5 medium Yellow Onio
1 small Bell Pepper
2 cloves Garlic
6 large Eggs
2 tablespoons Milk or Cream
1 cup Shredded Cheddar Cheese
0.5 teaspoon Salt
0.25 teaspoon Black Pepper
2 tablespoons Fresh Parsley

Instructions

  1. Peel and dice your potatoes into ½-inch cubes. Finely dice the onion and bell pepper, and mince the garlic
  2. Heat the olive oil in a large, oven-safe non-stick skillet over medium-high heat
  3. Add the diced potatoes and season with half of the salt and pepper. Cook for 8-10 minutes, stirring occasionally, until tender and lightly browned
  4. Reduce the heat to medium. Add the diced onion and bell pepper to the skillet and cook for 5-7 minutes until softened
  5. Stir in the minced garlic and cook for 1 minute until fragrant
  6. While vegetables cook, whisk the eggs, milk or cream (if using), and the remaining salt and pepper in a medium bowl until slightly frothy
  7. Pour the egg mixture evenly over the potatoes and vegetables. Reduce heat to low
  8. Cook for 2-3 minutes, gently pushing cooked edges toward the center to allow uncooked egg to flow underneath
  9. Once the eggs are mostly set, sprinkle the shredded cheddar cheese evenly over the top
  10. Transfer the skillet to a preheated oven at 350°F (175°C) for 3-5 minutes, or cover with a lid on the stovetop for 2-3 minutes until the cheese is melted and bubbly
  11. Garnish with fresh chopped parsley and serve immediately
