1 1/2 pounds boneless, skinless halal chicken breasts or thighs
1 1/2 cups uncooked long-grain white rice
2 cups low-sodium halal chicken broth
1 cup milk

1 cup frozen peas and carrots, optional

1. Preheat the oven
