1 lb Cooked Breakfast Sausage
10 large Eggs
2 cups Milk
1.5 cups Shredded Cheese
0.5 medium Onio
0.5 medium Bell Pepper
0.75 tsp Salt
0.25 tsp Black Pepper
0.5 tsp Garlic Powder
1 tbsp Butter

Instructions

  1. Preheat your oven to 375°F (190°C) and generously butter a 9×13 inch baking dish
  2. Tear the day-old bread into 1-inch pieces and distribute evenly across the bottom of the baking dish
  3. In a skillet, cook the breakfast sausage over medium heat until browned; drain excess grease and set aside
  4. Sauté the finely chopped onion and diced bell pepper in the same skillet for 5-7 minutes until softened
  5. Layer the cooked sausage, sautéed onions, and bell peppers over the bread, followed by 1 cup of the shredded cheese
  6. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until frothy
  7. Pour the egg mixture over the layers in the baking dish and gently press down on the bread to ensure it is submerged
  8. Optional: Cover and refrigerate for at least 30 minutes or overnight for better absorptio
  9. Bake the casserole in the preheated oven for 30 minutes
  10. Remove from the oven, sprinkle the remaining 0.5 cup of cheese on top, and bake for another 15-20 minutes until set and golden brow
  11. Let the casserole rest for 5-10 minutes before slicing and serving

Notes

Day-old bread is essential to prevent the casserole from becoming soggy.

If using fresh bread, toast it lightly in the oven first to dry it out.
