A hearty and halal-friendly one-pan breakfast skillet featuring spiced ground beef, crispy russet potatoes, vibrant peppers, and perfectly cooked eggs. This flavorful meal is protein-packed and versatile enough for a family weekend brunch.

Ingredients

1 lb Halal Ground Beef
3 tbsp Chorizo Spice Blend
2 large Russet Potatoes
1 medium Red Bell Pepper
1 small Yellow Onio
4 to 6 large fresh Eggs
2 tbsp Olive Oil
1 tsp Lemon Juice
1/4 cup chopped Fresh Cilantro
To taste Salt and Pepper

Instructions

  1. Heat olive oil in a large cast-iron skillet over medium-high heat. Add the diced potatoes and a pinch of salt. Cook, stirring occasionally, until the potatoes turn golden brown and tender (about 10-12 minutes). Remove the potatoes and set them aside
  2. In the same skillet, add the halal ground beef and break it apart with a wooden spoon. Stir in the chorizo spice blend and cook until the beef browns completely
  3. Add the diced onions and bell peppers to the skillet with the beef. Sauté for 5 minutes until the vegetables soften and become fragrant
  4. Return the crispy potatoes to the skillet and stir to combine. Add the lemon juice to brighten the flavor
  5. Use the back of a spoon to create four to six small wells in the mixture. Carefully crack one egg into each well and season the eggs with a little salt and pepper
  6. Reduce the heat to low and cover the skillet with a lid. Cook for 3 to 5 minutes, or until the egg whites set but the yolks remain runny
  7. Sprinkle fresh cilantro over the top and serve immediately while hot

Notes

Cut potatoes into uniform small cubes to ensure even and fast cooking.

Use room-temperature eggs to help them cook more evenly than cold eggs.

If you cannot find pre-made halal chorizo, the spice blend of smoked paprika, cumin, garlic powder, chili powder, and oregano mixed with ground beef works perfectly.

Leftovers can be refrigerated for 3 days, but it is recommended to only cook the eggs you plan to eat immediately as they do not reheat well.
