Ingredients

Scale

1.5 lbs Cod Fillets
3 tbsp Extra Virgin Olive Oil
2 tbsp Fresh Lemon Juice
3 large Garlic Cloves
1/4 cup Fresh Parsley
1 tbsp Fresh Dill
2 tbsp Halal Chicken Broth
To taste Sea Salt & Black Pepper
1 lemon Lemon Slices

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil
  2. Pat the cod fillets dry using paper towels to ensure they do not become soggy
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and halal chicken broth
  4. Place the fillets in the baking dish and season both sides with sea salt and black pepper
  5. Pour the lemon-garlic mixture over the fish, ensuring each piece is well-coated
  6. Sprinkle the fresh parsley and dill generously over the top of the cod
  7. Arrange fresh lemon slices around the fish for extra zest
  8. Bake for 12 to 15 minutes, or until the fish flakes easily with a fork
  9. Remove from the oven and spoon any leftover juices from the pan back over the fish before serving

Notes

Always pat the fish completely dry before seasoning to help it hold its shape.

Use fresh herbs whenever possible for the best flavor profile.

Do not overcook; check the fish at the 12-minute mark to ensure it remains tender.

Let the fish rest for two minutes after baking to allow juices to redistribute.

Store leftovers in an airtight container for up to two days and reheat in a pan over low heat.
