4 tbsp Unsalted Butter
16 oz Cream Cheese
0.5 cup Granulated Sugar
2 Large Eggs
1 tsp Vanilla Extract
0.25 cup Heavy Cream
1 tsp Lemon Juice

Instructions

  1. Line a muffin tin or silicone cupcake liners with paper liners to ensure easy removal
  2. In a medium bowl, combine the finely crushed graham crackers and melted butter, mixing until the crumbs are evenly moistened
  3. Press approximately 1.5 tablespoons of the mixture firmly into the bottom of each prepared liner
  4. Place the crusts in the freezer for 10-15 minutes to set
  5. Beat the softened cream cheese in a large bowl with an electric mixer until smooth; gradually add the sugar and beat until no lumps remai
  6. Add the eggs one at a time, beating on low speed after each addition just until combined
  7. Stir in the alcohol-free vanilla extract, heavy cream, and fresh lemon juice until just blended
  8. Spoon the batter over the chilled crusts, filling each liner about two-thirds full
  9. Gently tap the muffin tin on the counter to release air bubbles
  10. Preheat your air fryer to 300°F (150°C)
  11. Air fry the cheesecakes for 10-15 minutes until the edges are set and the centers have a slight jiggle
  12. Cool the cheesecakes completely at room temperature in the tin, then refrigerate for at least 4 hours or overnight
