1 large head Green Cabbage
3 tablespoons Olive Oil
1 teaspoon Garlic Powder
½ teaspoon Onion Powder
½ teaspoon Dried Thyme
¾ teaspoon Salt
¼ teaspoon Black Pepper
½ cup Parmesan Cheese
2 tablespoons Fresh Parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup
- Carefully remove any tough outer leaves from the head of cabbage. Cut the cabbage into thick wedges, about ¾ to 1 inch thick. Try to keep a bit of the core intact on each wedge
- Place the cabbage wedges in a large bowl. Drizzle generously with olive oil. Sprinkle the garlic powder, onion powder, dried thyme, salt, and black pepper over the cabbage. Toss everything gently with your hands to ensure every piece of cabbage is evenly coated
- Arrange the seasoned cabbage wedges in a single layer on your prepared baking sheet. Do not overcrowd the pan! If necessary, use two baking sheets
- Roast the cabbage for 20-25 minutes. At this point, the cabbage should start to soften and the edges should be lightly browned
- Remove the baking sheet from the oven. Carefully flip each cabbage wedge. Sprinkle half of the freshly grated Parmesan cheese evenly over the cabbage
- Return the baking sheet to the oven and continue roasting for another 15-20 minutes, or until the cabbage is tender-crisp and the Parmesan is golden brown and bubbly. The roasted cabbage parmesan should have delightfully crispy edges
- Transfer the roasted cabbage parmesan to a serving platter. If desired, garnish with fresh chopped parsley. Serve immediately

Ensure the baking sheet is not overcrowded for proper air circulation and caramelization; use two sheets if needed.
High heat (400°F/200°C) is crucial for softening cabbage quickly and developing crispy, browned edges.
For best results, use freshly grated Parmesan cheese and consider a squeeze of fresh lemon juice or a drizzle of balsamic glaze before serving to brighten flavors.
