  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter for brushing

Instructions

  • Warm milk and water to 110°F using instant-read thermometer.
  • Combine warm liquids, sugar, and yeast in stand mixer bowl, whisking gently.
  • Let stand 5-10 minutes until foamy indicating active yeast.
  • Add melted butter, eggs, apple cider vinegar, and vanilla to yeast mixture.
  • In separate bowl, whisk flour, xanthan gum, salt, and baking powder.
  • Add dry ingredients to wet mixture and beat with paddle attachment 3-4 minutes.
  • Transfer dough to greased bowl, cover, and let rise 45-60 minutes until doubled.
  • Line 9×13-inch pan with parchment and grease generously.
  • Stir down risen dough and portion into 12 equal pieces using greased scoop.
  • Place portions in pan with sides touching and smooth tops gently.
  • Cover and let rise 30-40 minutes until puffy and almost doubled.
  • Preheat oven to 375°F during second rise.
  • Bake 18-22 minutes until golden brown and internal temp reaches 190°F.
  • Brush hot rolls with melted butter and sprinkle with salt if using.
