Instructions
- Warm milk and water to 110°F using instant-read thermometer.
- Combine warm liquids, sugar, and yeast in stand mixer bowl, whisking gently.
- Let stand 5-10 minutes until foamy indicating active yeast.
- Add melted butter, eggs, apple cider vinegar, and vanilla to yeast mixture.
- In separate bowl, whisk flour, xanthan gum, salt, and baking powder.
- Add dry ingredients to wet mixture and beat with paddle attachment 3-4 minutes.
- Transfer dough to greased bowl, cover, and let rise 45-60 minutes until doubled.
- Line 9×13-inch pan with parchment and grease generously.
- Stir down risen dough and portion into 12 equal pieces using greased scoop.
- Place portions in pan with sides touching and smooth tops gently.
- Cover and let rise 30-40 minutes until puffy and almost doubled.
- Preheat oven to 375°F during second rise.
- Bake 18-22 minutes until golden brown and internal temp reaches 190°F.
- Brush hot rolls with melted butter and sprinkle with salt if using.
- Cool 5 minutes before serving warm.
