Base Recipe (for all variations):
- 6 large eggs
- ½ cup full-fat cottage cheese
- ¼ cup heavy cream
- ½ teaspoon salt
- ¼ teaspoon black pepper
Variation Add-ins (choose one): Mediterranean: 1 cup sautéed spinach, ½ cup feta cheese, ¼ cup sun-dried tomatoes, 2 tbsp fresh basil Classic: 6 strips cooked bacon (crumbled), ¾ cup sharp cheddar cheese, 2 tbsp chives Southwest: ½ cup bell peppers, ¼ cup jalapeños, ¾ cup pepper jack cheese, 2 tbsp cilantro Garden Veggie: ⅓ cup each zucchini, mushrooms, cherry tomatoes, red onion, ½ cup goat cheese Protein Power: 3 strips bacon, ¼ cup ham, ¼ cup breakfast sausage, ½ cup mixed cheeses
Instructions
- Preheat oven to 300°F and spray 12 silicone molds with cooking spray.
- Prepare variation-specific ingredients by cooking vegetables until tender and meats until fully cooked. Drain excess moisture thoroughly.
- Place a pan of water on bottom oven rack for steam bath.
- Blend eggs, cottage cheese, heavy cream, salt, and pepper in high-speed blender until completely smooth (60 seconds).
- Distribute your chosen variation add-ins evenly among the 12 molds.
- Pour egg mixture over add-ins, filling each mold ¾ full.
- Bake 25-30 minutes until centers are set and tops are lightly golden.
- Cool 5 minutes before removing from molds.
Notes
- Always pre-cook vegetables to remove excess moisture and prevent watery egg bites
- For best texture, use full-fat cottage cheese and heavy cream
- Silicone molds work best to prevent sticking – avoid metal muffin tins
- Can mix different variations in one batch by varying ingredients per mold
- Store refrigerated up to 6 days or freeze up to 3 months
