Ingredients

8 oz Pasta
2 tbsp Olive oil
3 cloves Garlic, minced
1 cup Cherry tomatoes, halved
2 cups Spinach or leafy greens
1/2 cup Parmesan cheese, grated
Salt and pepper, to taste

Instructions

  1. Boil a pot of salted water. Cook the pasta according to package instructions until al dente. Drain and set aside
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute until fragrant
  3. Add the halved cherry tomatoes and cook for 3-4 minutes until they begin to softe
  4. Stir in the spinach and cook until wilted, about 2 minutes
  5. Toss in the cooked pasta and Parmesan cheese. Season with salt and pepper to taste. Mix well and let cook together for another 2-3 minutes
  6. Serve warm, garnishing with additional cheese, if desired

Notes

Use frozen vegetables if preferred, just add them in the same step as fresh vegetables.

Experiment with different herbs for added flavor.
