Ingredients
2 3/4 cups All-purpose flour
2 cups Granulated sugar
1 tablespoon Baking powder
1/2 teaspoon Salt
1 cup Unsalted butter
4 Large eggs
1 cup Whole milk
1 1/2 cups Unsalted butter
6–8 cups Powdered sugar
2 teaspoons Vanilla extract
4–6 tablespoons Heavy cream or milk
1/4 teaspoon Salt
As needed Blue gel food coloring
Instructions
- Preheat your oven to 350°F (175°C). Generously grease and flour two 8-inch round cake pans; lining bottoms with parchment paper is optional
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until thoroughly combined
- In a separate, larger bowl, using an electric mixer, cream the softened unsalted butter until light and fluffy (about 2-3 minutes). Beat in the eggs, one at a time, incorporating each fully before adding the next
- Gradually add the dry ingredient mixture to the wet mixture, alternating with the whole milk. Begin and end with the dry ingredients. Mix on low speed until just combined (do not overmix). Gently fold in your desired amount of blue gel food coloring until the batter reaches a uniform blue hue
- Divide the blue batter evenly between the prepared cake pans. Bake for 28-32 minutes, or until a wooden skewer inserted into the center comes out clea
- Allow the cake layers to cool in their pans for about 10-15 minutes before inverting them onto a wire rack to cool completely
- While the cakes cool, prepare your buttercream. In a large bowl, cream the softened unsalted butter until pale and fluffy using an electric mixer. Gradually add the sifted powdered sugar, alternating with the heavy cream or milk, vanilla extract, and salt. Beat until smooth and creamy. Add blue gel food coloring, a little at a time, until you achieve your desired "sea" color
- Once the cake layers are completely cool, place one layer on your serving plate. Spread an even layer of blue frosting over the top. Carefully place the second cake layer on top. Frost the entire cake, top and sides, with the remaining blue buttercream, using an offset spatula or bench scraper for a smooth finish or wavy patterns
- Optionally, add edible glitter, sprinkles, or small toy sea creatures for decoration. Your stunning Blue Sea Cake is now ready to impress!
Notes
Always ensure butter and eggs are at room temperature for a smoother, more uniform batter and a lighter, fluffier cake texture.
Accurately measure flour by spooning it into the measuring cup and then leveling it off to prevent a dry cake.
Avoid overmixing the batter once flour is added, as this can develop gluten and lead to a tough, dense cake.
Use gel food coloring for a more vibrant, concentrated blue hue without altering batter consistency. Add gradually.
Allow cake layers to cool completely on a wire rack before frosting to prevent the frosting from melting.
Store leftover cake in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days. Bring refrigerated cake to room temperature before serving for best texture.
