  • Total Time: 20 minutes
  • Yield: 6-8 egg bites 1x

Ingredients

Scale
  • 6 large eggs
  • ½ cup cottage cheese (full-fat preferred)
  • ¼ cup heavy cream
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded cheese (gruyere, cheddar, or your choice)
  • 2 tablespoons fresh chives, chopped
  • Optional Add-ins:
  • 3 strips bacon, cooked and crumbled
  • ¼ cup fresh spinach, chopped
  • 2 tablespoons sun-dried tomatoes, diced
  • ¼ cup bell peppers, finely diced
  • 2 tablespoons green onions, chopped
  • Cooking spray for molds

Instructions

  • Preheat air fryer to 300°F (150°C) for 3 minutes.
  • Lightly spray 6-8 silicone egg bite molds with cooking spray.
  • In a high-speed blender or food processor, combine eggs, cottage cheese, heavy cream, salt, and pepper. Blend for 30-45 seconds until completely smooth.
  • Distribute shredded cheese and any desired add-ins evenly among the silicone molds.
  • Pour egg mixture into each mold, filling about ¾ full to allow for expansion.
  • Carefully place filled molds in air fryer basket, ensuring they don’t touch each other.
  • Air fry at 300°F for 12-15 minutes, until tops are lightly golden and egg bites spring back when gently touched.
  • Remove from air fryer and let rest in molds for 2-3 minutes before removing.
  • Gently turn molds upside down and tap to release egg bites.
  • Serve immediately while warm, garnished with fresh herbs if desired.

Notes

  • Use silicone molds only – metal molds may not fit properly in air fryer baskets
  • Don’t skip the blending step – smooth mixture is key to restaurant-quality texture
  • Cooking time may vary by air fryer model – check at 10 minutes and adjust as needed
  • For meal prep: store refrigerated up to 5 days, reheat in air fryer at 280°F for 2-3 minutes
  • Freeze up to 2 months – thaw overnight before reheating
  • Pre-cook vegetables to remove excess moisture and prevent soggy egg bites
  • Full-fat dairy ingredients prevent rubbery texture during air frying
