- 3 strips bacon, cooked and crumbled
- ¼ cup fresh spinach, chopped
- 2 tablespoons sun-dried tomatoes, diced
- ¼ cup bell peppers, finely diced
- 2 tablespoons green onions, chopped

Instructions
- Preheat air fryer to 300°F (150°C) for 3 minutes.
- Lightly spray 6-8 silicone egg bite molds with cooking spray.
- In a high-speed blender or food processor, combine eggs, cottage cheese, heavy cream, salt, and pepper. Blend for 30-45 seconds until completely smooth.
- Distribute shredded cheese and any desired add-ins evenly among the silicone molds.
- Pour egg mixture into each mold, filling about ¾ full to allow for expansion.
- Carefully place filled molds in air fryer basket, ensuring they don’t touch each other.
- Air fry at 300°F for 12-15 minutes, until tops are lightly golden and egg bites spring back when gently touched.
- Remove from air fryer and let rest in molds for 2-3 minutes before removing.
- Gently turn molds upside down and tap to release egg bites.
- Serve immediately while warm, garnished with fresh herbs if desired.
Notes
- Use silicone molds only – metal molds may not fit properly in air fryer baskets
- Don’t skip the blending step – smooth mixture is key to restaurant-quality texture
- Cooking time may vary by air fryer model – check at 10 minutes and adjust as needed
